We are celebrating here at The Bedford Swan as our apprentice commis chef, David Stephenson has won a place in the national Nestle Professional Toque d’or.
The catering competition provides real life challenges that inform, test and push both students and apprentices. David, who has worked with us over the last nine months entered the competition via a video audition. The brief was to make a vegetarian dish from a list of ingredients, being mindful of cost, and record a two-minute video explaining why he entered.
Only 50 apprentices from across the UK have made it through to the national heats, where David will have to produce four covers of his digital entry recipe of baby plum tomatoes, spinach, marinated feta and pepper salad within a specified time frame.
David will compete in the nationals in Birmingham on March 6th and if he reaches the grand final in London, he’ll be asked to produce six identical dishes for the judges over five days, for a chance to win an all-expenses-paid gastronomic five day trip to Europe.
We’ll be routing for David and you may even see his dish on our ‘Specials Menu’ this summer!
